Sausage Bread
Dough -
½ cup starter
3 c flour
1 egg
1 tsp salt
½ tsp yeast (optional)
1 TBS butter
1 TBS sugar
¾ cup warm cream
Mix ingredients, adding cream last and just until forms ball. Knead 5 min. Cover & let rest 1-2 hrs. Stretch & fold in thirds 4 times - cover & let rest 1 hr. Shape into long log about 1 ½ “ diameter. Flatten the roll a bit so it can hold the filling.
To Fill -
Using a pound of bulk sausage, roughly cut/shape the sausage into strips and place in the center of the dough strip - placing the sausage along the entire length of the dough.
Pull the sides of the dough up and over the sausage from both sides, pinching the dough together to close.
Place seam side down on a lined cookie sheet in an open spiral shape (no sides touching) - it’s overall shape does not matter… just as long as some space between all sides so dough cooks evenly. Cover & let rest 1 hr.
Brush with egg wash (1TBS cream & 1 egg yolk whisked smooth) & sprinkle Trader Joe’s Everything But The Bagel seasoning on top. Bake at 350 45 minutes or until golden brown.
Slice into 1” pieces & fill a platter - a dipping bowl of your favorite mustard in the center if you like.
