Hot Cross Buns

I usually start making them sometime in Lent…

and stop around July…

(Or I just stop putting frosting on them and we call them ROLLS)

they smell like happiness - taste like home - and flood my heart with kitchen memories

Do you make them?

3 1/2 cups bread flour

1/3 cup sugar

1/2 tsp salt

2 eggs

1/2 cup butter

zest of one orange

1/2 cup lively starter

1/2 tsp yeast (optional - for speed)

1/2-1 cup milk

mix together, adding milk just until ball is formed.

Knead 4 minutes & then ADD IN:

1 tsp cinnamon

1/2 cup currants

Knead 1 minute more or until incorporated

Cover & rest 1 hr - stretch & fold

Cover & rest 1 hr - stretch & fold

Shape, cover & rest 1-2 hrs

brush with yolk & cream egg wash just before

baking

350 for 30-45 minutes

(until nicely golden)

Top with orange frosting crosses enjoy!

Orange Frosting:

1 cups powdered sugar

Zest of one orange

1/2 tsp vanilla

1/2 TBS butter

ADD cream or milk JUST until smooth

(I like to put into piping bag to add on the crosses)
