a treat… with a little power boost - perfect for our chilly, slightly crazy mornings! Toasted, with a little butter &/or nut butter and we are ready to conquer the day.
Dough:
1 egg
2.5 cups bread flour
1/2 cups Sourdough Starter
1/2 tsp salt what you wanted to go to the shop for to work on the handle
3-4 cup warm cream or half&half
1 TBS butter
2 TBS sugar
(optional - you can add 1/2 tsp conventional yeast)
Power Boost Swirl:
1/2 cup ground walnuts
1 TBS chia seed
1 TBS flaxmeal
1/4 c brown sugar
1 TBS cinnamon
Method:
Mix ingredients, adding cream just until dough forms ball.
Knead 5min.
Cover & Rest 1.5+ hr
Stretch & Fold 4 times
Rest 1.5+ hr
Roll dough into rectangle about 1.5x as long as bread pan. Brush dough with 1-2 TBS soft butter. Spread Power Boost over top. Roll dough from both long ends towards center. Pinch seam closed. Twist dough several times (it will stretch a bit as you twist - you want to finish twisting when it’s about 2x longer than bread pan). Fold twist over itself, creating an 8 shape, folding ends under together. Set in bread pan to let rest 1.5+ hrs. Egg wash dough just before baking with egg yolk & cream Bake at 350 for 45 minutes. Slice when cool.
